mike & tori's baby shower

we did a casual baby shower for my FIRST asian niece!
my bro & sis-in-law are having their first baby in April and i couldn't be more stoked.
so i asked guests to bring a dish each, and i obviously took the opportunity to try out a couple new pinterest ideas ...with my personal touch
check err out!


(right) raw veggies: cut them into thin strips, 
they'll do their job and look pretty...you just can't go wrong

(middle) puff pastry sandwiches:


directions: 1. buy or make puff pastry (winner)
2. pre-heat oven to 375F & cut pastry in circles like the picture below with a cookie cutter
3. bake in oven for 15-20 minutes
4. cool & split each piece in half (horizontally) and use as upper and bottom layers of sandwich
5. fill the mini sandwich with cold cuts or however you like! 
(i did salami, mustard, lettuce and a bit of sun dried tomatoes)

(left) hoisin wonton cups:
directions: 1. buy some wonton cup skins (yes, superstore)


2. brush each wonton skin with oil* 
(or else they'll have the flour/powder still stuck on it, and make em shine)

3. press them into a muffin tin like below & bake for 5-10 minutes
 (i used my mini cheesecake pan ...ya... get one...)
(press them into the tin and bake with or without the stuffing - 
depending what you're stuffing them with)

4. fill them with your stuffing!
i filled it this time with some shredded chicken i poached 
and put some hoisin/soy-sauce/garlic marinade on
(but i've also stuffed it with enchilada stuffing before and it worked out great,
try out your own kind of stuffing...experiment & lemme know what else works !)

pistachio mini bites

mini cheesecake pans = THE best.
buy one here. it'll change the way you live...or just the way you bake hahah

so you can basically take any great cake recipe, or in this case - this layered dessert that i took
and transfer it over to your mini cheesecake pan for a cuter look


ingredients:

- 1 tbsp slivered almonds (my addition)
- 1/2 cup walnuts
- 1/2 cup butter
- 1 cup flour
- 1 tbsp. granulated sugar (regular sugar)
- 1 cup cream cheese
- 1 cup icing sugar
- 1 tub Cool Whip Whipped Topping (thawed)
- 2 pkg Jello Pistachio Instant Pudding
- 2.5 cups cold milk




directions: 1. heat oven to 325F & start off with the crust 
i pureed my walnuts in a food processor for a finer crust - then mixed it 
in with the butter, flour and granulated sugar.

press about 1 tbsp into each mini tin & bake for 15 minutes
(i added a little more than that this time and it was a little thick)

let it cool 
(i placed it in the freezer to speed up the cooling)


2. whisk the cream cheese and icing sugar until blended through; 
then fold in 2 cups of Cool Whip

spoon in over the crust...my pan was nice and messy


3. then make the pistachio pudding! whisk the pudding mix with the milk for about 3 minutes
(i substituted regular milk for almond milk since it's all i had, gave it even more of a nutty taste)

spoon the pudding over the cream cheese, let it stand for about 5 minutes to thicken

4. add the last layer of Cool Whip & refrigerate for 4 hours

5. i added almond slivers to the tops of mine in a flower shape instead of walnuts (original recipe)
but top it off with whatever you like

then pop it out with the removable bottoms in your mini-cheesecake pan!


cheap dates

starbucks + a walk in the park (slash beach) = cheap date!

we went back to third beach (where vic proposed 3 years ago!)
back then, he took me there and had a blanket covered with homemade mini candle lanterns and pillows all set up by a log - where he asked me to marry him!
ohhhhhh priceless memories.
thought we'd go back for a visit on this cold day


...then we went to the vancouver library (never been there before)
...and i took some creeper shots of my husband...

apple roses

just in time for valentines!


ingredients:
- 1 red apple, thinly sliced (makes about 6 roses)
- 4 cups apple juice
- 2 cups sugar
- 1/2 sheet of puff pastry (can make or buy frozen)

directions:

1. preheat oven to 400F 


2. slice and place in 4 cups of apple juice and 2 cups of sugar over stove, med-high heat
until apples are flexible, but not too soft (about 10 mins)


 3. cut thin strips of dough (puff pastry)


4. lay apple slices along pastry strip, slightly overlapping each other


5. roll inward from one end to the other, keeping the ends of the apple slices inside the pastry


6. pinch/fold in the end of the pastry to hold the rose together


7. place on baking sheet and bake in oven at 400F keeping a close watch on them until they're golden brown and centres are cooked (i didn't have twine so rolled up some tin foil to tie some of my roses to keep them together! ...improvise ! ha)


...and you did it! so cute, so simple. 


i added some powdered sugar later and served it with some vanilla ice cream!


it's GROWING!!!

cleaning up the house today, and MY HERBS ARE GROWING!!!!

hahahaha so proud of myself.
i kept saying (jokingly), if i can do this, i can do anything.
hahaha - i know i just stuck a seed in the dirt and watered it...but STILL
so proud.


this is my kale.

...so the other 3 pots still haven't sprouted anything....
my guess is because Basil says it needs sunlight, and I just don't have much sunlight these days hitting my windowsill. and the other 2 take a few weeks to sprout...so here's to hoping they'll sprout too in the next week or so!

i was totally doubting myself that i could plant a little herb.
here's to show, i need to have more faith in myself....and these little seeds.
now there's a life lesson beyond gardening ;) haha oh too good.
